Rwanda Impinduka Anaerobic Natural “Twist” Process
This coffee comes from Nyamasheke, Ngoma at an altitude from 1500 to 1850 MASL. Rwanda almost exclusively produces the red bourbon varietal of arabica, so we get a chance to see how specific and unique processing methods can change the final outcome of this varietal. Beginning with carefully selected ripe cherries, the coffee is floated and sorted by hand before being sealed for 72 hours of whole-cherry fermentation in large sacks (nicknamed “burritos”) which are rotated, or “twisted”, to maintain an even anaerobic fermentation. From there the coffee goes through a three-phase drying process over 15-22 days, carefully monitored to preserve the character developed during fermentation. By approaching this anaerobic process in a simplistic and straightforward method, this mill succeeds in producing a coffee with pronounced sweetness, intense fruit character, and a clean body. This coffee is a fantastic example of what the bourbon cherry can deliver when exposed to the right conditions and care.
